This dinner can be a pretty easy and quick weeknight success is you plan for it a head of time. I cooked the beef the night before and it had this casserole dish at the table in record time.
Ingredients
4 tbsp. butter
1 lb. ground beef, browned and seasoned with onion and garlic
2 cups of shredded cheddar cheese
2 cups of milk
¼ cup of flour
4 medium potatoes peeled and sliced in ½ inch rounds
2 tbsp. Bread crumbs
Salt and pepper
Crushed red pepper (optional)
Directions
Spray a casserole dish with cooking spray.
Bring a pot of water to a boil and add the potato slices and a generous amount of salt. Turn heat down to medium as not to boil over. Let potatoes cook for 15 minutes until tender. Do not overcook! You will have a mashed potato casserole if you do. Drain water and scatter potatoes in the casserole dish.
In a deep skillet on medium low, melt the butter and then slowly whisk in the flour. Whisk together until well blended and turning brown. Slowly add in milk. Let simmer for a minute. Add beef and cheese and blend well. Remove from heat and pour beef mixture over potatoes. Add bread crumbs on top of beef mixture.
Turn oven on to high broil and place dish in oven until the breadcrumbs have browned, about 5 minutes. Let rest for 5-10 minutes then serve with crushed red pepper garnish.
